Whenever we have leftover cooked quinoa I make these quinoa bites and they’re such a great addition of protein on the go for either lunch or a snack. We like to pair it with some ketchup or you can choose any dipping of your choice!


ps they’re also a great baby-wed-leaning option for introducing quinoa as it can get super messy!







Ingredients (makes about 13)

- 2 cups cooked quinoa

- 3 eggs

- 1 cup shredded mild cheddar cheese (more or less depending on your preference)

- 2 tbsp choice of flour

- 1/4 cup panko breadcrumbs

- 1 tsp garlic powder

- 1/2 tsp salt (more or less for personal taste)

- 1/2 tsp black pepper


Method

1. Mix all your ingredients together in a medium sized bowl

2. Roll your quinoa into small sized balls - I used a ice cream scooper to make the balls

3. Place them onto a lined or greased baking sheet

4. Preheat the oven at 375F and bake for 25-30 min

Banana Oat Cookies are one of my favorite ways to use up those ripe bananas. They're super easy to make and you can add in your favorite nuts to add in some extra texture and flavor as well. My toddler absolutely loves these and I know you guys will to!

Ingredients (makes about 10)

- 2 medium ripe bananas, mashed

- 1 cup of uncooked quick oats

- 1/4 cup finely crushed walnuts (optional)


Directions

1. Preheat the oven at 350F

2. Add all your ingredients into a medium sized bowl and mix together until all combined

3. Prepare a baking sheet with parchment paper or cooking oil

4. Scoop the mix into small balls and place them onto the sheet about 1 in apart and use a spoon to press them down into a flat cookie shape

5. Bake for 15-20 min or until golden

6. Let it cool for 5-10 min (it’ll harden as it cools) and serve!

Below is an overlook of our schedule. There are days where things may be different. We're also going to be taking away the 2nd nap soon. But, he needs it more than he doesn't right now so we'll keep it in till the time is right for us.
